Pelargonic acid is a saturated, straight-chain fatty acid with nine carbon atoms. It is found in various vegetable oils and animal fats and is also produced synthetically. Pelargonic acid is a colourless to yellowish liquid with an unpleasant odour. In chemistry, pelargonic acid is used as a starting material for the synthesis of various chemical compounds, such as pelargonic acid methylester, pelargonic acid anhydride and pelargonic acid amide.
